I don’t seem to do much here except talk about my weekends, which I’m afraid isn’t very exciting for anyone. Stay with me just once more though – there’s going to be lots of cake!

On Sunday night we had a birthday dinner for one of my housemates. We made a beef and guinness pie (complete with a gorgeous ombre pie bird) and followed it up with a pink ombre layer cake. It was so nice to have a night in with my housemates – it’s rare we’re all home for dinner! 2012 is shaping up to be the year of the layer cake – this was the third I’ve made this year. I won’t share the recipe here because Raspberri Cupcakes does a much much better job of explaining how it’s done than I ever could but I’d highly recommend this recipe (and if you need persuading that a scale is necessary for baking, no one lays it out better than Shauna). So often layer cakes are dry but this one was moist and delicious. We made four layers (tinted pink) which we filled with jam and whipped, slightly sweetened cream. The whole thing was finished off with a thick layer of ganache (a half batch of this recipe) and lots and lots of pink and purple sprinkles. It seems my obsession with layer cakes is going nowhere fast – this one is next on my list.

The weekend was also newsworthy because I finally bought an DSLR camera. I’ve been lusting after one for ages and now that I have it in my hot little hands I’m so excited to start using it. I’m doing a photography course in a few weeks too – much needed as I’m overwhelmed by all the things this camera can do!
